3 Easy Chocolate Dessert Recipes – Heavenly and Healthy(ish)

As all of you chocolate connoisseur know, chocolate is all about a sophisticated sensory experience.  If you have a sweet tooth, you’ll love these chocolate dessert recipes with a slightly healthy twist using dark chocolate as the main ingredient and catering to all of your senses!
Chocolate Mousse made from Dark Chocolate
This delicious guilt-free(ish) dessert has all of the health benefits that dark chocolate offers, and goes down a treat at dinner parties!

 
Chocolate Mousse Ingredients:

100g dark chocolate, chopped (we suggest 70% Lindt Cocoa Dark Chocolate)
100g milk chocolate
3 eggs -separated
1 ¼ cup cream
½ cup milk
1 spoon of sugar

Method:

Separate the eggs and beat the yolks until foamy, leave in a separate bowl.
In another bowl, add milk to the dark and milk chocolate pieces.
Place the bowl of chocolate and milk over a pot of gently simmering water, whisking constantly until the ingredients have dissolved.
Remove from the hot water bath and stir in the egg yolks.
Beat the egg whites together with sugar until they are stiff, pour into the chocolate mixture and mix well.
Whip the cream until thick and mix into the mixture.
Pour the mousse into a bowl and cover with plastic wrap.
Keep it in the fridge overnight.
Garnish with nuts and a selection of seasonal berries and serve!

Dark Chocolate Truffles
These decadent little dark chocolate balls are also great to decorate. We suggest rolling them in cocoa or pat them with nuts or even coconut.

Dark Chocolate Truffles ingredients

1 cup  cream
2 tablespoons butter
4 squares dark chocolate
2 ¾ cups semi-sweet chocolate chips
2 tablespoons instant espresso powder
Cocoa, nuts or coconut (for decoration)

 Method:

In a saucepan over medium heat combine the cream, chocolate, chocolate chips and espresso powder; stirring constantly until the chocolate has melted and you have a smooth, thick mixture.
Remove from heat.
Pour into a bowl and leave in the refrigerator for an hour.
Line a baking sheet with waxed paper.
Scoop small balls of the chocolate mixture onto the waxed paper and leave in the refrigerator until the balls are completely hard.
You can now decorate them to your heart’s desire!

 
Dark Chocolate Fudge
We left the best for last! The best part of fudge (besides the taste) is that you can package the fudge in very creative ways and these make great gifts for someone’s birthday or anniversary gift.

Dark chocolate fudge ingredients:

3 cups semi sweet dark chocolate chips
1 can of sweetened condensed milk
1/8 teaspoon salt
1 ½ teaspoon pure vanilla extract
½ cup Walnuts

Method:

Line your baking pan with aluminium foil, going up the sides and grease the foil with butter.
In a medium saucepan over low heat melt the chocolate chips and mix in the condensed milk and salt.
Remove from her and stir in the vanilla.
Break walnuts into small pieces and add to the mixture.
Pour into your baking pan and spread evenly with a spatula then cover with plastic wrap.
Leave in the fridge for two hour.
Cut into small pieces.
