Mother’s Day is around the corner and there’s no better way of spoiling yours truly than with a delicious serving of breakfast in bed. Follow these simple Breakfast in Bed recipes to have her smiling from ear to ear!
Vegetarian Egg cups
INGREDIENTS
Serves 6 (per recipe)
5 eggs
Salt, to taste
Pepper, to taste
Mix and match fillings:
Spinach, chopped
Tomatoes, diced
Onion, finely diced
Bell pepper, finely diced
Broccoli, cut into small florets
Cheddar cheese
PREPARATION
1.Preheat oven to 180ºC
2. In a measuring jug, beat the eggs until smooth. Set aside.
3. In a greased muffin tin, place your desired combination of fillings into each muffin cup.
4. Season each cup with salt and pepper.
5. Pour the beaten eggs over the filling until the liquid almost reaches the top.
6. Bake for 20 minutes, until set.
Good old scrambled eggs
INGREDIENTS
3 Eggs
15g Salted butter
Salt and pepper – as desired
4 Slices smoked salmon
2 halved and toasted bread buns
30g Cream cheese
Fresh chives
PREPARATION
Beat eggs, salt and pepper and a dash of milk in a medium sized bowl.
Melt butter in large non-stick skillet over medium heat. Pour in egg mixture. As eggs begin to set, gently pull the eggs across the pan with a spatula, forming large soft curds.
Continuecooking – pulling, lifting and folding eggs – until thickened. Remove from heat while slightly undercooked – the eggs will continue to cook in the hot pan.
Place toasted half-bun roll onto plate. Layer with thick coat of cream cheese. Layer a few slices of smoked salmon over the cream cheese and top with scrambled eggs. Sprinkle with fresh chives.

Home-made breakfast basket
INGREDIENTS
6 Slices brown/ white bread
4 – 6 Eggs
250g Bacon
2 cups Cherry Tomatoes
A handful of fresh basil
Salt and pepper – as desired
PREPARATION
Preheat oven to 180°C.
Using a sharp knife, cut 3cm slices into the bread, starting at each corner, and cutting towards the centre.
Gently place each slice of bread into a greased muffin pan. Press the sliced sides together using your fingers. Layer with butter.
Bake in the oven for 5 minutes, or until bread is golden brown.
Simmer cherry tomatoes in a thin layer of water in a large non-stick pan until soft.
Once most of the water has evaporated, add the basil and do a quick fry of the tomatoes with basil. Remove from the pan once heated thoroughly and set aside.
Cook eggs, as you like.
Fry bacon until crispy.
Plate the breadbaskets and layer the toppings as follows: Egg, tomato-basil and top with bacon.
Garnish with freshly chopped basil.
Serve in bed, plated and warm, with Mom’s favourite mug of coffee!
