Cinco de Mayo is about celebrating everything that is truly Mexican! After the Mexican Army victoriously beat the French forces in the Battle of Puebla, this day became well renowned for the celebration of everything the Mexican culture has to offer. To celebrate this day, we’ve put together 3 must-make Mexican recipes to help you celebrate Cinco de Mayo the truly traditional way!
Traditional Beef Burrito:
Nothing says Mexican flavour like a delicious beef burrito! This is one of our favourite Mexican Recipes!
Ingredients:
- 1kg lean ground beef
- 1 cup chopped onion
- 2 large garlic cloves, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- ½ cup siracha sauce
- 250ml can fat free refried black beans
- 6 10-inch flour tortillas
- ¾ cup sour cream
- 1 ½ cups finely shredded cheddar cheese
Directions:
- Pre-heat the oven to 190°C
- Cook the ground beef in a large non-stick pan over medium heat for 5-7 minutes. Stir frequently; once cooked thoroughly, drain the mince.
- Add onions, garlic, chili powder, cumin and siracha sauce to the meat and stir.
- Once thoroughly heated: spread 1/3 cup of black beans on the bottom of each tortilla leaving 1-inch around the bottom and edges.
- Spoon a few tablespoons of fried mince over the black beans.
- Top the meat with 1 tablespoon of sour cream and sprinkle with cheddar cheese.
- Fold in the bottom of the tortilla and then the sides; keeping the filling enfolded.
- Place onto a greased oven tray and bake for 12-15 minutes or until browned – turning over once.
- Enjoy your delicious burritos!
The Enchilada
Mexican Recipes are often rich in taste, flavour and- of course- cheese! The classic Enchilada shows why it’s famous around the world!
Ingredients:
- 4 skinless, boneless chicken breast halves
- 1 onion, chopped
- 1 cup sour cream
- 1 cup shredded Cheddar cheese
- 1 tablespoon dried parsley
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt (optional)
- 1 can tomato paste
- 1/2 cup water
- 1 tablespoon chili powder
- 1/3 cup chopped green bell pepper
- 1 clove garlic, minced
- 8 (10 inch) flour tortillas
- 3/4 cup shredded Cheddar cheese
Directions:
- Preheat oven to 180°C.
- Cook the chicken in a non-stick pan over medium heat. Remove the chicken from the pan and allow to cool slightly before slicing into cubes.
- Return the chicken to the pan, along with onion, sour cream, cheddar cheese, parsley, oregano and ground black pepper. Heat until cheese melts. Stir in salt, tomato sauce, water, chili powder, green pepper and garlic.
- Spoon the mixture onto the tortillas and roll the sides in.
- Arrange the filled tortillas alongside each other in a rectangular baker.
- Brush the tops of the tortillas with the sauce from the filling and sprinkle with cheddar cheese.
- Bake uncovered in the oven for 20 minutes. Cool for 20 minutes before serving.
Delicious!
The traditional delicious quesadilla
Ingredients:
- Large flour tortillas
- Grated cheese – either mild or sharp cheddar, or Monterey Jack
- Olive oil or grape seed oil
Optional:
- Sliced mushrooms
- Green onions
- Black olives, sliced
- Fresh tomatoes, diced
- Avocado
Directions:
- Heat a large non-stick frying pan to medium-high heat. Add a small amount of oil and spread thoroughly around the bottom of the pan. Take one large flour tortilla and place in pan – flip over tortilla a few times (about 10 seconds a side)
- Once air pockets start to form place a handful of grated cheese and sprinkle across the tortilla. Add whatever extra ingredients you would like as the filling for the quesadilla. Try not to layer ingredients too thickly.
- Reduce the heat to low and cover the pan. Once the cheese is sufficiently melted and the underside has browned slightly, use a spatula to lift one side and fold the quesadilla in half.
- Cut into wedges and serve!
