The Baker’s Best | Creamy Butter Biscuit Recipe

Here are 4 tips for getting extra creamy smooth cookies:

  1. It’s all about the creaming:

Make sure that you really cream that butter and sugar, for a full 7 minutes in a stand mixer. That’ll get you the lightest, crispest cookies!

  1. It’s really, really about the creaming:

Repeat the above process again, after adding in the egg. Cream for 5 minutes.

  1. Add the Flour by hand:

Don’t overdevelop the gluten by simply pouring in the flour. Add and mix this by hand, stopping as soon as the dry flour has disappeared.

  1. Use a cold baking sheet:

Don’t press your cookies onto baking or wax paper, and don’t utilise non-stick spray, as these promote sliding. Rather, get your baking tray as cold as possible, and press your cookies directly onto the tray.

Creamy Vanilla Biscuit Recipe:

Ingredients:

  • 1 1/2 cups unsalted butter
  • 1 cup sugar
  • 2 large egg yolks
  • 3 3/4 cups sifted all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon pure vanilla extract

Method:

  1. Heat oven to 180°C.
  2. Place your baking tray in the fridge, to keep it cool
  3. In your stand mixer, cream your butter and sugar for 7 minutes, until light and fluffy.
  4. Add your egg yolks, and cream the mixture for a further 5 minutes
  5. Add and mix the flour, salt and vanilla by hand, stopping once all the dry ingredients have been absorbed. Keep in the fridge whilst setting up.
  6. Fill the biscuit gun with the dough, and reattach the base and your attachments.
  7. Press the biscuits out onto your cool baking tray, leaving roughly 3cm between each cookie. If you are looking to add coloured sugars, or even coarse sugars, add now.
  8. Bake until lightly brown, roughly 7-10 minutes.
  9. Transfer to a wire rack, cool, and Enjoy!
