Chilli Lime Baked Shrimp Cups
You’ll need
- 15 wonton wrappers
- 12 large shrimps, peeled and deveined
- Zest of 1 lime
- 1 tsp chilli powder
- 1 cup baby arugula leaves
- 3 tbsp sour cream
- 1 tsp fresh lime juice
- Pepper
- Salt
- Olive oil
Get started
- Preheat the oven to 180˚
- Place the wonton wrappers in a muffin tray and lightly brush with oil on both sides. Make sure that the bottoms are pressed down to make a defined cup
- Lightly season the wrappers with salt on one side and bake for 8-10 minutes. Leave to cool on a wire rack.
- For the shrimp, add lime zest, shrimp, 2 tsp of olive oil, chilli powder, salt and pepper together and toss.
- Arrange the shrimp on a baking sheet in one layer and bake for 8-12 minutes.
- To make the lime sour cream, mix sour cream, lime juice and a pinch of salt together.
- Fill the cooled wontons with a few leaves of arugula, dollop of sour cream and top off with chilli-lime shrimp.
Last note
The wonton wrappers are prone to collapse during baking so be sure to make a few extras just in case. The wrappers should be filled right before serving to keep them from getting soggy but they can be kept in an airtight container for up to a week.
Watermelon, feta and mint salad
We doubt you’ll be able to put together an easier salad than this creamy, fruity favourite! Slice watermelon, cut blocks of feta and stack! It’s a definite crowd pleaser, super easy to make and will keep your guest’s feeling fruity fresh.
Last note
Adapting this salad for home use is just as easy. Instead of tossing the feta together with the watermelon, crumble it on top for a more interesting texture and flavour. Sprinkle with mint leaves and voila!
Corn Dog Pops
You’ll need:
- 1 cup yellow cornmeal
- 1/4 cup white sugar
- 1 cup all-purpose flour
- 4 tsp baking powder
- 1 egg
- Wooden skewers
- 1 cup milk
- a pack mini frankfurters
- 1-quart vegetable oil for frying
Get started
- Preheat oil in a deep saucepan over medium heat.
- For the batter, combine cornmeal, flour, pinch of salt and pepper, sugar and baking powder.
- Stir in egg and milk.
- Put a bamboo skewer into each frankfurter lengthwise.
- Dip each sausage into the batter, coating completely, then place in the hot oil. Cook for 3-4 minutes or until corn dogs are golden brown.
- Drain on paper towels.
Who doesn’t love a crispy, deep-fried bite of meat and bread? Yum! Serve with tomato and mustard dipping sauces.
Easy blueberry tarts
You’ll need
- 1 1/2 cups plain granola
- 1/4 cup granulated sugar
- 3 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- 1 cup plain full fat yogurt
- 225 ml cream cheese, at room temperature
- 1 tsp vanilla extract
- 1 cup blueberries, rinsed and patted dry
Get started
- Preheat the oven to 180°C.
- Blitz 1 cup granola and ¼ cup sugar in a food processor.
- Drizzle in the butter and process until combined.
- Add the remaining 1/2 cup granola and blitz just until combined but still crumbly.
- Transfer the mixture to a muffin tin and press it evenly onto the bottom and all the way up the sides of each hole. Refrigerate until firm.
- Bake for 10 minutes and leave to cool on a wire rack.
- Beat cream cheese with an electric mixer until very smooth.
- Add the sugar and vanilla and beat until smooth.
- Reduce the speed to low, add the yogurt, and beat until smooth.
- Pour filling into the cooled crusts, cover loosely, and refrigerate until set.
- Just before serving, scatter the blueberries over the yogurt filling.
Chocolate frozen banana bites
