MINI QUICHE VARIETY

Serves 18

You’ll need

  • 800g Frozen Puff Pastry
  • 1/2 finely chopped red onion (per variety)
  • 3 Eggs (per variety)
  • 1/4 cup heavy cream (per variety)
  • 1/4 cup finely shredded Swiss cheese (per variety)
  • 1/2 tbsp flour (per variety)
  • 1/8 tsp salt (per variety)
  • 1/8 tsp pepper (per variety)
  • Bacon, cooked & finely crumbled
  • Shredded Chicken Breast Cooked
  • Ham
  • Some fresh chives for garnish

Get started

  1. Thaw the puff pastry at room temperature overnight.
  2. Roll it out on a floured surface and cut into disks. Place the disks in a muffin tray.
  3. Sauté onion in a small amount of olive oil until tender and set aside.
  4. In a glass measuring cup with a spout, combine the eggs, cream, cheese, flour, salt & pepper and whisk until smooth.
  5. Stir in sautéed onion and crumbled bacon.
  6. Pour mixture into pastry cups, filling it almost to the top.
  7. Bake at 170°C approximately for 12 minutes or until eggs are set.
  8. Garnish with chopped fresh chives and serve!

An important step to creating the perfect cheese platter is your cheese selection. For an explosion of flavour, try to include a variety of cheese textures and flavours.

For a great combination, try and choose one from each of the main cheese groups: aged, soft, firm, or blue.

Tip: Always serve one familiar cheese. For example, blue cheese can be overwhelming to someone who’s never had it before so give your guests something they’re used to as a starting point.

Accompany your cheese with tasty artisanal breads, a variety of delicious preserves, and a few sides of biltong, dried fruit and nuts (and some wine) and voila! You have the perfect cheese board.

CLASSIC BEEF CARPACCIO

We must say, this dish could be something of an acquired taste so let your guests know what it is, before they start munching. Raw meat isn’t everyone’s cup of tea.

You’ll need

  • 250g piece best-quality beef fillet, trimmed
  • 2 tbsp extra virgin olive oil
  • 1/2 cup (40g) shaved parmesan
  • 2 tbsp toasted pine nuts
  • Wild rocket leaves, to serve
  • 2 tbsp finely chopped chives
  • Lemon wedges, to serve

Get started

  1. Enclose the beef tightly in a plastic wrap and freeze for 30 minutes. This will make it easier to thinly slice the meat.
  2. Unwrap the beef and very thinly slice it, using a sharp knife. Place the slices of beef between sheets of plastic wrap and flatten them out with a rolling pin.
  3. Arrange 4 or 5 slices of beef on each serving plate and drizzle with oil. Season well with sea salt and freshly ground black pepper, then scatter with pine nuts, chives and shaved parmesan.
  4. Serve with rocket leaves and lemon wedges. Yummy!

ROSÉ BLOOD ORANGE LEMONADE

You’ll need (per single serving)

  • 3 tbsp lemon juice
  • 1 tbsp sugar
  • 1 cup water
  • 1/8 cup rosé wine
  • 1/4 cup blood orange juice
  • 3-4 ice cubes, crushed
  • Fresh mint and strawberries for decoration

Get started

  1. Stir together the lemon juice, granulated sugar, water, rosé wine, and orange juice.
  2. Pour the lemonade into a glass.
  3. Top with crushed ice cubes, strawberries, and a sprig of mint.
  4. Decorate your glass with a ring of sugar for an appealing finish!
