Alcoholic Dessert Recipes #1 | Stout Hot Chocolate
Ingredients:
The hot chocolate:
1 cup Heavy Cream
½ cup Milk
½ cup Dark Chocolate Chips
1 cup Chocolate Stout (to remove alcohol, see note below)
2 tablespoons Sugar (if desired)
The whipped cream:
1 cup Heavy Cream
1/3 cup Powdered Sugar
2 tablespoons Stout- try Guinness
Preparation:
In a pan over medium-high heat, melt chocolate chips in cream and milk. Stir continuously, about 5 minutes.
Remove from heat, stir in the stout. Depending on your personal preference and the level of bitterness in the beer you used, taste and determine if you want it sweeter, add in the 2 tablespoons of sugar for a higher level of sweetness.
Return to heat and stir until desired temperature is reached (Usually about 70-80 degrees C).
To make the whipped cream, add all whipped cream ingredients to a stand mixer, whip on high until soft peaks form, about 3 minutes.
Serve hot chocolate topped with whipped cream
Tasty, warm and indulgent!
Alcoholic Dessert Recipes #2 | Fudge Bourbon Balls
If you’re looking for delights for dad to dig into, try these amazing Fudge Bourbon balls!
Ingredients:
2 ½ cups of chocolate chip cookie crumbs
¼ cups of pecan nuts
½ cups of great quality bourbon or rum
1 cup confectioners’ sugar
3 tablespoons unsweetened cocoa powder
1 ½ tablespoons honey
Preparation:
In the bowl of a food processor, pulse together the cookie crumbs and pecans until the nuts are finely ground.
In a separate bowl, stir together the bourbon or rum, 1 cup confectioners’ sugar, the cocoa powder, and honey. Add the mixture to the food processor and pulse until just combined. Let the dough rest, uncovered, at room temperature for 4 hours or, lightly covered, overnight. This will dry it out a little.
Use your fingers to roll the dough into balls about 1 inch in diameter. Roll the balls in confectioners’ sugar. Store the balls airtight if you like them moist, or uncovered if you like them to develop a crunchy sugar crust on the outside. Sprinkle with (or roll the balls in) additional confectioners’ sugar just before serving.
