YOU WILL NEED:

400g frozen ready rolled puff pastry
100g grated hard cheese/parmesan
100g mature cheddar (the more mature the better)
2 cloves garlic – finely chopped
Cayenne pepper
Freshly chopped rosemary
Salt flakes
1 egg, beaten

GET STARTED:

Allow the puff pastry to thaw and lay the sheet out.
Pre-heat the oven to 180°C
Sprinkle the pastry sheet evenly with hard cheese, cheddar cheese, garlic, rosemary and a pinch or two of cayenne pepper
Using your fingers, press the ingredients into the puff pastry so that it sticks into the surface slightly.
Fold the pastry in half and gently roll with a rolling pin – pressing the two layers together.
Brush with egg wash
Using a sharp knife, or a pizza cutter, cut the pastry into strips (about 1cm to 1.5cm thick)
Using both hands, carefully twist each strip by pinching each end and turning in different directions
Place each strip onto a baking sheet lined with wax paper about 3.5cm apart
Lightly sprinkle straws with salt flakes
Pop into the oven for 25 – 30 minutes until golden brown
Leave to cool and dig in

Depending on the size of your strips, this recipe should make up to 20 garlic & rosemary cheese straws .
