Condensed milk cheesecake slice
These mouth-watering cheesecake slices are jam-packed with juicy berries and make an ideal sweet treat for sharing with your guests.
You’ll need:

250g Tennis Biscuits
125g butter, melted
500g cream cheese, at room temperature
390g can sweetened condensed milk
2 tbsp lemon juice
2 large eggs
1 1/2 cups frozen mixed berries

Get started:

Preheat oven to 170°C.
Grease and line the base and 2 long sides of a baking tray with baking paper, allowing the sides to overhang.
Process the biscuits in a food processor until finely crushed. Add the butter and process until well combined.
Spoon the biscuit mixture into the prepared pan. Use the base of a flat-bottomed glass to spread and press over the base.
Place the mix in the fridge for 30 mins to chill.
Meanwhile, process the cream cheese in a food processor until smooth. Add the condensed milk and lemon juice and process until smooth.
Add the eggs and process until well combined.
Sprinkle half the berries over the base. Pour over the cream cheese mixture and smooth the surface. Sprinkle with remaining berries.
Bake for 30 mins or until just set.
Cool in the oven, with the door ajar, for 1 hour.
Then place in the fridge for 2 hours to chill. Cut into squares to serve.

Caramel apple tarts

 You’ll need:

12 bought tart shells
1 cup Nestle Top ‘n’ Fill Caramel
3 Pink Lady apples
1/4 cup lemon juice
1 tsp sea salt flakes

Get started:

Preheat oven to 200°C.
Place the tart shells on a large baking tray and bake for 10 mins.
Fill each tart shell with 1 tbsp. of the caramel.
For a beautiful touch, create these simple apple roses:

– Start by using an apple corer to core the apples. Halve them lengthways, and then cut crossways into 1mm thick slices.
– Place in a large bowl with the lemon juice and toss to combine.
– Set aside for 10 minutes or until softened. Place about 8 apple slices, overlapping slightly, on a clean work surface and roll up tightly.
– Arrange over a tart to form a rose and repeat the process with remaining apple slices and tarts. Sprinkle with the salt.
– Bake for 10 minutes or until the pastry is golden and apple is tender.

You’ll need:

175ml sunflower oil
175g sugar
3 large eggs
1 tsp vanilla extract
200g coarsely grated pumpkin or butternut squash flesh
100g raisins
grated zest 1 orange
2 tsp ground cinnamon
200g self-rising flour
1 tsp bicarbonate of soda

For the frosting

200g tub full-fat cream cheese
85g icing sugar
toasted chopped pecan nuts to decorate (optional)

Get Started:

Heat the oven to 180°C.
Line a 12 cup muffin pan with paper cases
Pour the oil into a mixing bowl and add the sugar, eggs, and vanilla.
Beat together, and then add the grated pumpkin, raisins and orange zest.
Stir in the cinnamon, flour, and bicarbonate of soda, the mixture will be quite wet.
Spoon into the cases and bake for 25 minutes until firm and springy to the touch and a skewer inserted in the centre of a cupcake comes out clean.
Cool completely on a wire rack.
Cool note: At this stage, you can freeze the cakes for up to 4 months.

To make the frosting

Beat the cream cheese and sugar together until smooth then spread on top of the cupcakes.
Leave plain or decorate with toasted pecans. Store in the fridge, but return to room temperature to serve for the best flavour and texture.
